WHO AND WHERE?
Job Title: Sous Pastry Chef
Establishment: Two AA Contemporary Restaurant inside a 5* Hotel
Average Covers: 80 lunch and 140+ for dinner
Cuisine: modern British
Brigade: 35+ within main kitchen and pastry
Location: Central London (District or Circle Line)
Salary: 30,000k per annum (negotiable)
Shifts: 7 shifts per week
WHAT ARE THEY LOOKING FOR?

A competent sous pastry chef to run a busy section producing desserts for a busy two rosette restaurant, banqueting outlets, afternoon tea and a basic bar menu.

To lead and develop a brigade of 8.

Someone who is experienced in: planning menus, recruitment and disciplinary issues.

A pastry chef that is used to large volume.

Someone with a proven track record working within similar establishments.

Previous experience cooking British is essential.
